These garlic parmesan sweet potatoes are the easiest side dish or an awesome breakfast, if you throw an egg on top!

main dish = 1 potato per person
Ingredients:

sweet potato
-
2 cloves of garlic (minced)

vegetable or canola oil
-
parmesan
-
parsley *optional*
Directions:

Wash, peel, and chop your sweet potato.

Set a medium sized pan to medium heat and add 1 tbsp of oil.

Next, add your minced garlic and chopped sweet potatoes. Stir well, so all the potato chunks are coated with olive oil. Cover and turn to medium-low heat.

After two minutes, stir and cover. Repeat the process two more times.

Transfer to plate and sprinkle on parmesan and parsley (optional). Enjoy!
